Our philosophy
The love for our land is reflected in our choice of organic cultivation.
For the past twenty-five years, the winery Centofanti has begun a process of renewal and experimentation in the vineyard in order to raise the management level of the plantings, as well as the quality level of the grapes produced. Following a series of experiments with planting layouts on small plots and related micro diversifications in order to evaluate the final result, the conclusion reached was that the double stage pergola is the planting layout that best suits the microclimate in Giuliano. The double stage ensures both good aeration of the grape, limiting the conditions for the proliferation of botrytis and its optimal shading so that it ripens not by direct light but by reflected sunlight. For management purposes, this kind of planting pattern considerably facilitates the manual operations of green pruning and harvesting.
Our philosophy can be summarized in a greater attention to the vineyards, in order to be able to offer our winery only grapes of the highest quality, harvested with a good sugar content and a balanced acid heritage, so that they through the most modern oenological techniques, adopted by our highly esteemed oenologist, Jacopo Centofanti, can become those structured , long-lived and characterful wines that distinguish our winery.
