Service temperature: 10-12°c
Wine making: soft pressing of grapes and fermantation of the limpid must in small steel tanks at low temperature.
Aging: in steel tanks and the contact with fine lees goes on for about four months after which the wine is bottled.
Organoleptic features:The wine appears crystal clear, straw yellow color with greenish reflections, good consistency. The nose is intense with very delicate fruity scents of yellow plum and medlar, citrus notes, closes with slight vegetal hints that give complexity and finesse to the nose. The taste is dry, fresh in terms of acidity and with the right amount of sapidity resulting never excessive. A full-bodied wine, quite balanced, intense, with excellent persistence thanks also to a slight fruity-floral return and a delicate almondy finish.
Food pairings: wine is served at a temperature of 8°-10°C as an aperitif with some olive all’ascolana (stuffed olives), or it can be served with fish or vegetables dishes.
